    There will be two nodes (the green attachment points) you can attach to - one for the central engine and one for the motor plate (engine plate in the English version). You can change the position of the engine plate node by right clicking the part and changing the length.
    It sounds like you are attaching to the central engine node, which will generate the shroud (cover) for the central engine only. You need to attach to the engine plate node. These two nodes will be in line with each other, but the engine plate node should be the lower one. Depending on the length of the engine plate, the two nodes can sometimes overlap, making it difficult to tell which is which.

    Two things to start helping
    Are you running 1.4.3? Because exploding lander legs was an issue in 1.4.2
    And...can we see some screenies of the craft? So we can get an idea of what you mean by simple/complex booster.

    You need to go into the tracking centre and zoom out until you see Kerbin and the planet you are wanting to go to. 
    Rotate the view until Kerbin is at the 3 o'clock position (don't have to do this but it always helps me). Phase angle is the angle between Kerbin and your target planet. 
    E.g. If the phase angle is 90 degrees and Kerbin is at 3-o'clock, the target planet would be at 12 o'clock. 
    A negative phase angle means it's that many degrees behind you (bottom of screen if Kerbin is at 3), positive phase angle means it's in front of you (top of screen if Kerbin at 3).
    Ejection angle is the place where you need to complete your prograde burn and eject from Kerbin, measured as if the path of Kerbin's orbit prograde is 0/360.
