The only problem I have is the coupler point is visibly lower than the bottom of the lander.

You may want to make the decoupler a lil wider, some things like sas mosules stick out in weird ways.

Would it be possible to turn the chute adapter upside down, could make that into a lander strut.

You may want to consider liquid engines for your final 2 stages, solid motors don't offer a lot of control when it comes to orbital adjustment.

As far as i can tell the wings don't do anything except create drag and weigh down the part of the ship they're attached to.

We need more landing options, it'd be nice if we had those inflatable cushions they used for martian rovers.

It is a tad wobbly, besides that I think it works pretty well. As long as you're not traveling at 7k/s already that is.
