When in map view, the option to select the advanced manoeuvre editor and the advanced orbital info sometimes 'lock' themselves and they cannot be selected. This happens in both sandbox and career, and doesn't always occur (but does most of the time). Is there any explanation to this?

If you find a command pod to be flipped partway through flight, you can right click on it and select the control point to be reversed.

On low gravity worlds, the landing gear on my SSTOs will often start bouncing up and down, and the only way to stop it is to manually set spring strength to the lowest setting and gradually ease it back up. That being said, they have certainly improved over the past few versions.
