I'm not clear about what you're asking. After two mated ships separate you are not in control of the one you want to be controlling? Control from here should fix that, as you say. Maybe try switching with the square bracket keys ] and [? Pictures of your craft might help diagnose problems.

Sounds like your ship is too tall and not wide enough. What does it look like?

So... why not play KSP? Then you could paint it more.

How are you opening them accidentally? By staging? If so, you can r-click and choose not to have them staged, or moved them to the top of the stack where they won't be triggered and then manually discard them in flight.

It's unlikely. The team has moved over to working on KSP2.

When I started KSP there weren't any tutorials. Trial and error is a good way to learn.
