Of course people have got bored of KSP. You should take a break from the game for a while and wait until the next update or the one after. Then when you come back hopefully you will start enjoying the game again.

Runway versus Launchpad?

Are you in the spaceplane hanger? You want to click on the taller building, called the Vehicle Assembly Building (a link to an image of it) to build a rocket, rather than the shorter one (Called the Spaceplane Hanger). -
Hull Flags, How do you edit them?

You can get rid of the flag on the side of your command pods by right clicking on each individual command pod and selecting remove flag. I don't believe there is any way to change the image that is shown. -

Kerbal Alarm Clock. If you are ever doing multiple missions at the same time, it is almost essential.

Good advice but the inclination of Minmus is 6º so rather than 76º or 104º, you would want 84º or 96º.

You will have to change your inclination at either the ascending node or descending node. Look at this page at the Match Orbital Inclination section. Alternatively you could look at or this video. The principles put forward for ships is the same for planets/moons.

The delta v requirements for reaching orbit around Earth are more than double the requirements for reaching kerbin. it takes ~9500 meters per second of delta v just to reach low earth orbit, and easily a thousand or two more to go anywhere useful. It is not fesable to do a pure rocket SSTO with any reasonable payload.

The quicksave / quickload feature used to get overwritten every time a new craft was launched, however this was changed to the current system some time ago. For your problem, while not the same you could edit the save file to bring yourself back to the same amount of science you had before, then possibly edit any ships into their orbits again

I can't play without: FAR KER Kerbal Alarm Clock Those are the three mods I consider essential, however I have a handfull of other mods that I consider very important. -
Viewing Satellite From The Ground

You could use Distant Object Enhancement, which should allow you to view the craft so long as it is sufficiently big and within 750 km, it would be best to view it at dusk or dawn though. -

Yes it does, in fact I own that same make myself. -
The game autosaves fairly regularly , this us what us being reloaded when you exit to the main menu and reenter. However this is completely different from a quicksave.

Attaching jet engines onto small payloads!

I can't see your image, however a lot of people,myself included, have used jet engines to make vertically launched SSTO's. It is a fairly common thing to do. -
As far as I can recall for every 1.1 units of oxidiser used 0.9 units of liquid fuel are used.

Generally it is best to be in as low an orbit as possible, to take advantage of something called the Oberth effect (An explanation can be found here). This means that around Kerbin you want to be in a roughly 80km (or lower) orbit, in order to get maximum savings in terms of delta v.

Probably the closest you are going to get is Infernal Robotics, which comes with hinges and many other movable parts.

How did you start your KSP learning curve?

Discovered it through Kurt J Mac here as well, I started off in 0.16. I bought the game within the first day of discovering it, it was just such a good fit with what I enjoy in games. Started off with simple rockets before progressing to landing on the Mun and beyond. -
I believe this is the mod that you might want, the Davon Throttle Control systems mod.

While this mod has not been updated recently, the author claims to be working on it, and it seems like it would solve your problem. -
It takes more Delta V to get anywhere in real life than it does in the game, however, in general rockets have a greater efficiency than in the game.

A small thrust to weight on a transfer stage is not a large problem. One thing you could do is to do your burn in multiple orbits. An example is that you seperate your burn out into three 5 minuit burns , therefore taking full advantage of the oberth effect. You would time warp around your orbit to the next burn. Of course if delta v is not a problem then option 1 is viable. However it is likely to take just as long. Also don't forget about possibly using physical time warp to shorten the time it takes.
