I just looked at the source, am I correct in assuming that Clamshell is default?

Yes they are the default. You need do nothing (except install the mod) and your fairings will clamshell by default.

I don't know if it will work on ships you already built, though. Those may keep the confetti fairings as that's how they were set when built.

It's the best name I've found for them. It explains what they are, is quite accurate, and doesn't imply "OMG KSP IS BROKEN I HATE SQUAD THEY ARE SO DUMB," at least not to me.

Personally, I don't consider confetti separation to be "broken", even if aesthetically I'd prefer clamshell.

Same here. While it's unfortunate Squad didn't include an option for clamshell, the current stock implementation of fairings is totally kerbal, and it seems most of the community has gotten a bit too serious about the game to accept this

Thank you for this mod! I have used inter-stage and final stage confetti fairings only to have them rip my ship apart. Can't wait to see if this helps.
