Sadly they can't do that anymore, if you go below 250m at any speed it blows up.

Also my hardest part is trying not to oversize rockets.  I try to get into orbit with LVT tanks and then somehow I end up with a kerbodyne super-refueler with extra fries.

I know this thread is ded, but the hardest thing for me is sticking with a career save once I'm done with the Mun and Minmus, or in Duna Space Program, Ike. I've got an Ike station right now but I need to bring a nuclear generator up there but for that I need more money to upgrade the R&D facility to be able to research them

Land bases. I can never seem to make them work properly. Either they're impossible to balance, or impossible to assemble once I've gotten all the bits where I want them to go. And wheel suspension makes the old put-it-on-wheels thing not work properly for me, ever.

That's not hard, it's utterly impossible!! 
In the same theme; the hardest thing is going to bed at a sensible time so that you can get up for work and not spend the next day in a semi-delirious state, dreaming about rockets.

I admit it seemed like a hugely complex, intimidating task so I didn't learn to dock until I had been playing for a year or so but it's really not that hard and after a bit of practice it became routine.

RCS thrusters at the CoM help a ton. If not it’s just slowly bumping into/near the docking port and then rotating both ships. If you only have control over one ship... it’s a bit more difficult and time consuming.

What?
RCS at either end and away from the CoM works best for me (have to dial them down for smallish crafts).
