is it technically possible to fly in or land on the sun?

Once you hit -250 on your altitude meter no matter what cheats are on I believe you will explode, same rule with any body in the system including Jool. But don't let that stop you, you can "land" by boosting once you are about to hit the surface and attempt to climb back into orbit. I would love to see it!

Any gaseous body, that is Jool or Sun.

I went to -1500 on Eve just fine.

Yep. At a couple hundred you cross a surface of total darkness, nothing is visible below - but the bottom exists, and with some clever engineering you can even pick samples.
