Setting the Date/Time

use HyperEdit. Its misc tools button has a field to set the UT in seconds since the start of the game. So day 344 (assuming year one) would be 29635200 seconds. The easiest way to get seconds for time is to use KSP Trajectory Optimization Tool (Mission Architect) - its main window will let you right-click on the time input box and enter in year, days, hours, minutes and seconds.

If you decide to just edit the save file directly the parameter you're looking for is UT, not UTC
