Is there any way to remove a part from staging in 1.2.2?

Some parts can be excluded from the staging stack just by turning on Advanced Tweakables in the stock game settings.  This includes docking rings, decouplers of any kind, and fairings.  If it's an engine you don't want to stage, you can just drag it up to the top of the staging stack (with the parachutes) and it won't automatically activate, requiring you to right-click to activate it when you're ready (this will get you a warning that "engine staged away before use" in the analysis, but does no harm if you do it intentionally).

I can't offhand think what else might show in the staging stack that you might want to avoid staging -- launch stabilizers might want to be in a separate staging event from engine ignition, but you'll still want to just "space, wait (for engines to come up to full thrust), space" at launch.  A launch abort tower is a special item, but it's generally handed with action groups -- one to decouple your command pod and ignite the abort engine, another to decouple the abort tower from the pod and ignite its engine.  IIRC, this isn't normally a staged item anyway (I haven't made much use of them).
