Yes... but the delta-v required to get out of Kerbin's SoI this way is more than to get into orbit around Kerbin.

Rule of thumb; straight up is never the cheap answer. You lose 10m/s per second as the planet pulls you back, and when you're talking multi-minute burn times, it quickly becomes enormous. Gravity is a cruel mistress :(

harder in terms of delta-v, easier in terms piloting.

From a launch, it is MUCH easier to orbit the Sun. 

Build a rocket, fairly big, but doesn't have to be huge. 

Point straight up.  Turn on SAS.  Fire engines.  Keep going till you enter Solar orbit. 

Orbiting Kerbin, on the other hand, takes a lot more finesse.  Gravity turns, orital manuevering, controlled burns, etc.

The word "easiest" is quite ambiguous in this situation, you'll have to clarify what you mean.  Easier could mean less work (Solar), or cheaper rockets (Kerbal).

I'd argue that you'd spend more time in the VAB making a rocket that will break SoI by going straight up than you will waste by pressing w a few times during the ascent of a smaller rocket :) 

Also it's really hard to do anything useful with the resulting solar orbit unless your astro-fu is very strong.

If you are inspired, then aim directly for the sun, and eventually your wings will be fried, and you will crash down into the ocean. My plane named icarus did this

PSA: Do not aim vessels directly towards the sun.  Burn orbital retrograde relative to the sun instead.

Or burn prograde relative to the sun until your apoapsis is really high, then burn retrograde there. Waaaaay less delta v.
