Symmetry changes when I don't want it to

I'm following this tutorial on building a Vostok capsule:

and I am having a symmetry problem. I have eight panels, and I want to place four packs of batteries on them. Every time I try to do so, the symmetry automatically switches to eight.  I tried using the X key, but it would only then switch between eight and no symmetry.  The guy doing the tutorial managed to work around this without placing them individually, but I did not get how he did it.   FYI: The relevant part of the video is at 27:10.

If you try to place parts on multi-symmetrical parts, the game will match the existing symmetry.  The only workaround I'm aware of is to set it to single placement & place each battery seperately.

Okay, so it looks like this is how the game is designed. I think the tutorial guy placed them down low enough that they were not on the panels and then slid them upwards. Either way, I now know what is going on and won't try to fight it and will use workarounds.
