Is it possible to complete the career mode using just stock ships?

You need 17,000 science, approximately, to do it.

Doing a quick look at the stock craft, it maybe possible. You'd have to grind a fair bit on contracts, and tweak the heck out of the strategies.

Not sure either, but stock ships aren't really optimized or great examples of well-designed craft. You can do a lot better on your own

The stock ships are simply provided as examples to play with and are not optimized. They're there to give you ideas so you can make your own, better ones.

Some of those stock ships are left overs from before there was a career mode.   They are just intended as design examples, not really as suggestion on how to do anything correctly. 

 

It would make for a interesting challenge idea though.

It *might* be possible. There are plenty of early career craft If I could tweak one part - add a docking port to each craft - then definitely yes.
