I have been playing KSP for a good while and was wondering if ANYBODY knows of any mods that add loads of extra (USEFUL) parts to the VAB.

Useful is very subjective.  A strictly rocket player wouldn't care of prop engines and wings.  Someone who never leaves the atmosphere probably doesn't care about heavy lifting engines or large fuel tanks.

There are some people who got really excited about all the structural panels in MH.  I couldn't care less.

What kind of parts are you after?

Anything that adds parts like communication, boosters, engines, fuel tanks, and parts that only fit together to make a predefined rocket (like a real life replica).

Lots of fuel tanks, engines, and a wide variety of SRBs from 0.625m up to 3.75m:

Both of Snark's suggestions are excellent, I'd also recommend some of  @Angel-125 's mod line-up, specifically:

MOLE for early to mid-tech Gemini-like launchers & stations.  

And DSEV for late-career long range exploration ships:

Probably easiest to just browse the add on release forum and see what you like, spacedock would be another good place to just browse.
