Bigger hinge/servo = more weight it can support?

I'd say mostly based on the geometry of you're trying to create.  The G-11 type hinges let you move 90 degrees to each side from ("top") (i.e., if the mounting node is "bottom."  The G-32 opens like a book, in one direction.

Personally I've been using the first time more for cranes, grabber arms and the like, and the alligator hinges for deployable parts.
