A good video guide on how to build a small mk 2 Sato using parts that can be accessed either late game or in sandbox it can hold little or no cargo, and only a few passengers but functions rather well.

It's easy to build SSTOs in recent versions of KSP.  In fact, it's hardly worth staging at all for many loads.  Here are a couple of the most basic SSTO designs I know

This is about the lightest and cheapest 'basic' SSTO you can build:

• Aerodynamic Nosecone
• RC-001S Remote Guidance Unit
• FL-T200 Fuel Tank
• FL-T100 Fuel Tank
• 2 x 24-77 "Twitch" Liquid Fuel Engines

6 parts, 3,375 funds, 1.978t.

The MOST basic SSTO would just use 2 parts but always find it flips out unless I add the nosecone.  It's ridiculously expensive and overpowered so tweak the engines to 30%

• Protective Rocket Nosecone Mk7
• RC-L01 Remote Guidance Unit
• LFB KR-1x2 "Twin Boar" Liquid  Fuel Engine

3 parts, 20,850 funds, 43.2t.  Obviously it's the integrated fuel + engine of the twin boar that makes this so simple.
