What are upgrade patches and how do I know which to install?

Well, a patch is mainly an update, usually containing fixes, sometimes updating or introducing new game mechanics, parts, etc.

As per my experience, it's more often than not a good idea to wait a little while before jumping to the latest update as patches also have the tendency to introduce new bugs and make some mods incompatible. Usually, I stick with the patch version just before the latest version for a while before upgrading.
