Just wondering if anyone has tried playing career mode with RSS or a rescale of kerbin.

I get the feeling that it would be impossibly grindy on normal mode, but probably fine if you really bumped up the funds/science multipliers.

Also, has anyone tried interstellar with a resized solar system? I'd be very interested to hear. :)

I think some Youtuber did a KSPI/6.4x install at one point, not sure if he used stock parts of went with RealFuels. I'd suggest RealFuels and the Stockalike engine config with everything else stock (plus KSPI, ofc), it's a lot of fun and the payload fraction is still pretty high (near 10%, IIRC) so it still feels very much like KSP, only bigger and better.
