they generally try to avoid firing rcs (especially the ones who would be firing more towards the space station, like the ones needed for reverse) when this close. (simply to limit the risks of contaminating the science equipments attached outside ISS with the rcs exhaust gases), so there's a good chance they have something like a spring release :) (said spring would be compressed during docking, both to absorb the docking impact before locking, and to push back the spacecraft when undocking)

I was wondering if it was flapping because of the coolant being circulated through the structure.

Lajoswinkler said this in the youtube comment section about the flapping radiator:  "It's one of the station's radiators. It's loosened and it swings like a pendulum in vacuum. ISS is not a rigid object and docking and undocking procedures cause mechanical vibrations of the whole structure which gets visibly amplified on such thin, wide, loosened things. The only thing stopping it is internal friction. Just like with flags in vacuum. They will flap and swing around."
