How the control system work in the KSP to complete attitude control and engines control?

You mean what are the key bindings to control a ship?

Hit escape and go to settings and look at the key bindings....

WSAD for up down left right

QE for rotating I think...whatever is right and left of W.

Shift and ctrl to throttle up and down or z and x for full throttle and zero throttle....

Control surfaces move to the set value with constant angular velocity.

Reaction wheels, RCS and some gimbals (with small max angle) instantly assume set value.

Most gimbals exponentially approach set value until small error when they snap to it.

Boris-Barboris has basically the right answer except for SAS. When a user hits a control key, then control surfaces respond at a fixed speed as he said. RCS responds fully, instantly. Gimbal is supposed to respond that way, too.

SAS modes use a PID with additional algorithms. When you select a new SAS mode, the PID algorithm will try all the control directions to learn which one turns the craft in the proper direction, by the proper amount.

Kerbal jetpacks on EVA also use a simpler PID algorithm than the SAS one.
