apoapsis jumping like crazy

it's driving me crazy, i'm doing everything fine but apoapsis and my speed are changing like crazy even though my engines are off, seriously wtf?

Oh my. Might I suggest "moar struts!" In all seriousness though, the ship is probably just doing some wobbling. Be patient, keep trying to do a 5x timewarp, and it will eventually settle down.

Manned missions to Eve with a landing and return to Kerbin are the absolute, no-doubt about it, hardest missions possible in the stock KSP system. I think that craft will work, but there are others that might be easier. Take some of tavert's designs from this thread into consideration. :

You'll find that they are easier to control and your computer will thank you for the lower part counts. The big thing is choosing landing sites carefully, and saving fuel and delta-v in any way possible. Brute force will work, but sometimes it actually makes the mission more difficult.
