When trying to grav turn spaceship spins out

You are using an old method.  You need to begin your gravity turn right off the pad.  Then just let it slowly fall to three horizon.  Most people say you should be at 45° @10-15km.  It will take some practice to get good at it, but it should only take a few degree nudge once you've stated moving.

It is also worth noting that if you have an angle of attack too steep (as in, you're pointing too far away from the direction you're going at), you will create a lot drag on the side of your rocket which make rockets flip during the gravity turn.

As said above, add a lot of control authority like canards at the bottom end of the ship and try to begin your gravity turn as soon as you have taken off and let it gently fall to the desired direction.

I have been trying to do the gradual grav turn but I am very bad at it :/ Any tips or instrucions?

(I do have orbit but I have less fuel than I needed, sadly I don't have docking ports so I need to restart the mission.)

It's going to vary a little bit with each rocket design, so it'll take some practice and it's hard to give overly specific instructions.  Make sure your TWR is reasonable(somewhere between 1.2-1.8 is probably good) and start your turn at about 50-100m/s to start out with, see how it goes, and then if it didn't work, make adjustments and try again from there.

This.

A good design is one that you can just launch with a few degrees of inclination and it will do a gravity turn by itself or with help of SAS set to prograde. It takes time to be able to do it consistently but is also very rewarding.

Third.

My favorite launchers are SRB first stages that launch at 1-2° and 60-80% thrust with no SAS. I only exercise control to correct heading/inclinàtion. Then engage prograde follow for stage 2.
