I've made rockets with up to 12 stages. Just keep adding things to the bottom. If you click the command module and drag up, you can give yourself more space under the rocket to add stuff to the bottom.

For nuclear explosions, the engine you want is Project Orion, which has already been suggested in its own thread somewhere. Anywaym Warringer, thanks for this part. I've used it as one of the later stages on almost every rocket I've built since downloading it.
