Feel free to check into the Shuttle Challenge Thread v3 and ask for advice on this! There's plenty of people with modded and FAR entries, and many many experienced shuttle builders kicking about. You can link them back to this thread for exposure or simply ask in the thread proper (although I would request you post your images in gallery format to help with minimizing post length ). Also you can review my Buran thread if you want to delve into it a little more.
How else can I help. Well it looks like you have a nice shuttle going there. You have a few options in how to hold a steep(er) AoA based on your design (disclaimer - I don't have and have never used FAR):
1) Add SAS authority - More units equals more weight. The is a simple solution but not that desirable so avoid if you can. Besides it's way more satisfying creating a well balanced shuttle rather than a brute force heavyweight.
2) Clip a pair of AV-R8 winglets into the cockpit. Some people don't like clipping but it does work.
3) Increase the maximum deflection on your flaps, and also engage both your split tail plane and your body flap on the way in (it looks you you have an active body flap there?). This will help with aero-braking and also holding a steeper AOA
4) Doesn't look you have much RCS pointing up and down on the nose. 3 up 3 down normally is a good starting point. You can remove some of the foward pointing ones if you are going for styling points and mount them on the wings.
5) Implement the TiltProbeCore™ Solution as devised by @n.b.z.. It really does work well to hold a specific angle of attack, remarkably well. Definitely worth a try (and only uses stock parts).
I think enough people have chipped in on the nose cone with solutions, but one other thing worth trying is mounting a couple of radiator panels inside your cargo bay. It seems to help quite a lot with dissipating re-entry heat so may help prevent nose conesplosions.

Hmm, not sure on your specific issue, but to find your logs in steam you right click KSP in Steam, click on Properties, then in the Properties box, click Local Files, then Browse Local Files.
EDIT: Just found this in devnotes which could be something to do with your issue. States:
" One of the issues that came up last week related to the way career mode generates random orbits with the new orbit code. To cut a long story short contracts were generating erroneous parameters with the new orbit code and saving them, causing persistent issues. To fix this, Brian (Arsonide) edited the orbit generation algorithm to be more modular which allowed him to change it to regenerate only the orbital parameters that were faulty, while leaving the others intact. Because the code had to be re-designed, this proved to be an excellent opportunity to make it much easier to work with for devs and modders alike. "
