Here's mine. What started out as an idea to get a fuel depot into orbit, has just gotten its first habitation module. The design is not elegant in any way, I just designed it for efficiency and compability. As you can see, it holds a lot of fuel, and with all three types of docking ports on each fuel module, it has the potensial for expanding in many different ways, and it has the capability to recieve most types of spacecraft for refueling. Here's the launch vehicle for the fuel tanks. Not much fuel efficiency here. Good thing the Kerbal echonomy allows for such extravagancy! Once rendezvous with the station is completed, the service module is jettisoned. The 2x4 RCS thrusters around the center of mass makes docking much easier than it could've been. Once docked, the tower including the control unit and SAS module is jettisoned, making the station only controlled by its center module (with SAS and control unit intact). Both sides of the tank are equipped with Sr. Docking Ports, both revealed when the tower or service module is jettisoned. And here's the launch vehicle for the habitation module. Not too easy on the juice either. Here the tower is jettisoned first, to allow RCS to be put on the Service Module for jettison once docked.
