The center of mass is not in the middle of your rocket. There are too many parts that are making the mass uneven. Try builder a simpler launcher that uses only about 30 parts.

This huge fuel depot is currently in a LKO around Kerbin. The space station is comprised of 3 different modules, the habitation module which can house 8 Kerbals, the fuel module which can hold about 2000 Monopropellent and 10000 units of fuel, and the command module that has 4 solar arrays to power the station.
