If it's just a matter of *that* tank staying full - pump it to another tank (select two tanks and use the in/out options).

Yes, it's in the tracking station. Select the 'vehicle' in question from the list on the left, the 'i'nformation button then shows on the right. Click that for the vehicle's information, including type and name.
Once it's selected though, it's easier just to click the 'terminate' button at the bottom and be done with it.

In order to work out what that much fuel, through those engines, can achieve we'd need to know the mass of vehicle (fully fuelled). From that we'd calculate the deltaV; the amount it can accelerate or decelerate (which is just accelerating backwards).
As important as speed, however, is heat-management and - off the top of my head - I think you will almost certainly burn-up on entry to the atmosphere. Should you survive that, those engines are all super-efficient but very low-thrust so would not be able to stop the fall. Neither do you have enough parachutes or legs for Eve, it's the highest-gravity planet in KSP! It's not quite the hardest place to land but it is definitely the hardest to take off from again.

How "custom" are they?
Stock: no, you can't see them. I manage that by standardising my action groups as much as possible.
Raster Prop Monitor (RPM) mod: no, you still can't see them but a neat trick is to list them in the ship description when you 'save' it in the VAB. This description is displayed when the MFDs are 'idle'.
Action Groups Extended (AGX) mod: yes, you can see all 250 action groups any time you like and change them in flight if you want to.
These mods are rather excellent, why not try them both? :-) AGX is obviously more applicable to your specific enquiry but RPM is always worth a look anyway.
