I've made a more stable version for places like Minmus. You can belt along at 100m/s+ in a straight line with little risk of tipping.

Or you can put the throttle at 10%, save fuel and circumnavigate Minmus at 50m/s.

At slower speeds it handles well, doesn't skip about and won't tip unless you really try.
