What are some types of payload lifters?

The only rockets I know how to design are asparagus and they don't really work so well sometimes.

I also have trouble with making 2.5m rockets or bigger.

The designs is usually make have a centre stage with a mainsail and then i have more tanks on the out side that all have fuel lines leading into the centre stage. When the tanks run out i decouple the outer stages leaving the centre stage full. The number of boosters and size depends on your payload.
