Hey, I'm currently using huge steel wheels, made of several structural plates (vanilla, 2x2). Of course, their "grip" is horrible XD Is there a way to change their friction on the ground?

They're never going to work that way whatever you do; that's why we have wheel colliders after all. Changing physics materials in ksp appears to be a bit of a challeng anyway, so you're pretty much on to a non starter. Sorry!
