I would appreciate if someone made a mod that adds cargo bays that DONT open this way i can have ships with entire interiors and use just one small average cargo bay piece as an opening, Also good if making carrier hangers!

KAX+ does this for the 2.5m form factor, but I'd like to see it for Mk3 as well

I also have been looking for parts like this. Shouldn't be too hard to make, as all you really need is a cargo bay that doesn't open. In fact, I think you could clone a stock cargo bay and just disable the modules it uses to open/close. I might have a look at doing this but I don't know if I'll be able to as my modding experience consists of creating a very basic and non-functional life support system (then again, it's easier to kill kerbals with explosions than code).

Edit: I was able to make it, I'll post a thread and a link sometime today.
