Is there an easy way of tracking your speed over time?

Also, every test i did on the runway showed a top ground speed far higher than is possible in the end of mission window; I have no idea why.

I will do a test on ice tomorrow evening if i have time.

Yes, the crappy way.

You fire up the vehicle, and count to 5, pause, record what you think you saw. you resume, starting from 5 you count to 15 and record. Then so on, until you reach your maximum speed, which you also record. You think we should start the challenge yet?
