I have the latest edition(ish) and have successfully got the space station core up into space BUT

I have an engine on the back and don't know how to get it of AND

Dont know what to add to it as it has 2 Kerbals onboard help please images very useful words for me are quite hard and my eye sights not perfect

Did you not put a de-coupler or docking port between the station core and the fuel tank and engine assembly? If you don't want to revert to an older save I guess you could try and launch a probe and crash it into the engine form the side and knock it off. There is a risk that the station core gets damaged or de-orbited though. If it was me I'd first return the Kerbals to the KSC and the de-orbit the station core with a probe with a claw, I hate messy stations hehe.

Or, do it the Kerbal way and use the Whack-a-Kerbal...
