Why isn't my mun periapsis showing on encounter?

One could burn. In pretty  much any direction that is not directly pointed at the Mun, although those directions that are in the plane that is perpendicular to the collision course have a reputation of being particularly effective.

A very small burn, somewhere between radial-out and retrograde, should set you on a perfect low-Pe encounter. Radial-out will make you encounter the Mun earlier (therefore before you reach such a high altitude); retrograde will make you encounter the Mun at a lower altitude (but will slow you down and make the encounter later). Between the two should therefore be perfect...

Clicking on the target planet and selecting focus view will show you the orbit line as it will appear when you're within the sphere of influence of that body. It can help you to fine tune your orbit in cases like this. a small prograde or retrograde burn should fix that up easily.
