How do I build planes to fly in career mode?

The same as you would in sandbox. Only with less parts.

You unlock plane parts.

You can always build them in Sandbox and copy the .craft over to your career save.

That is, assuming you're playing 'no saves, no reverts' and want to avoid the 'early mortality' typical to all airplanes.

Otherwise - just the same as in sandbox.

Career mode is all about getting science and funds to unlock the parts in the tech tree that you need. So you go into Mission Control and take contracts to get funds, and you use the science equipment that you have on missions to get science points. Then you go into R&D and buy the Aerodynamics technology with the science points.

Here's how I do it.

(1) Grind enough Science to be able to purchase most of the aviation tech tree, and enough Funds to be able to upgrade the spaceplane hangar and runway to level 2.

(2) Build them.

Put another way: if you're trying to build planes using the level 1 runway and the lowest-tier aviation parts only, it will be really hard. You can, but you need to know exactly what you're doing. The higher-tier parts will make things progressively easier.

If you want to get into orbit with a plane, you will need to go pretty deep into the tech tree -- it can be done with the Panther engine, if only just, but you will really want the Whiplash and Aerospike.
