Seriously though, if you have a good idea for an accurate survey, I'd be curious to see the results.

 

It should be doable via accurate altitude and length measurements. Sea level is the Kerbin sphere, which has a known radius and therefore curvature, and so if you measure the altitude above that at a set of flags at fixed distances from each other you should be able to figure out if and how the altitude changes differ from that curve.
