I had 2 probes disappear?!

Did you reload by pressing f9 or you load from main menu? If you load from f9, then it's possible that you quicksaved before the probe reaches orbit

Also, another possibility is, you quit before the game autosave your progress, so when you load, they r still not in orbit

On the last note, take a look on tracking station. Highlight all options above the screen to display all object (maybe your probe display is turned off in tracking station)

Nope. I saved the game, and when I exited out and loaded it back up both probes disappeared odd enough same thing happened again. I set out 2 more probes, this time the second one stayed behind while the first one disappeared (Along with it's track lines on Scansat map).

Sounds like you have a kraken attack. It happens sometimes, though a bit rare. It's a persistent bug in KSP that sometimes mess with your craft, from parts randomly exploding to outright destroying the entire ship. Watch danny2642's video for kraken attacks

If possible, add a screenshot (the sat and tracking station view after launch)
