The grafitti scrawls on the landing craft in the title screen art use a so-called "metal umlaut" to make it look more badass, so the Kerbals can psych themselves up for success. Yes, this is actually a thing that exists. Other than that scrawl, you will not find any reference to an umlaut in the Mun's name in any official material anywhere. This includes videos of @HarvesteR, the original creator of the game (who has since moved on), where he plays KSP and pronounces "Mun" without an umlaut.

(Also, the game has supported the usage of umlauts in vessel names even before the localization update. This was never a technical limitation. It just was never called "Mün" to begin with.)

 

Re: the proper name for the Moon IRL: that statement is also wrong. :P 

Names of celestial bodies are assigned by the International Astronomical Union. However, when that committee was formed in 1919, people all over the world had already been calling various celestial bodies by a myriad of different names in a myriad of different languages since the dawn of time. Who is the IAU to come in and tell someone that, by their decree, the name they've been using all along is now wrong? Of course this was not done.

Instead, for celestial bodies that have historically had multiple names, all those names are accepted as proper and official. "Luna" is a proper name for our moon, but not the proper name. It is simply the official name in the Latin and Spanish languages. "Moon" is the official name in the English language. "Mond" is the proper name in German. And so on. The same is true for the Sun, for Earth, for Jupiter, and dozens of other objects that people can observe with the naked eye or with simple instruments. Even some especially noteworthy stars have many different names, despite being many lightyears away.

Considering that Moach was one of the two truly original players of this game — when no computer was required, just fireworks and aluminum foil — and has made it known he actually coined the name for the little green guys... I'm gonna believe him about the Mün.
