Not really the correct place for this mate, but.....

In order to get the "test while splashed down" missions completed, build something that can make the small hop east to the sea, and land in the water. You will probably need to have multiple parachutes to come down slowly enough to not destroy the engine.

You can stage it so the part needing testing will be new and ready to test after you land in the water.
