On steam, that's pretty easy :)
Right-click the game in your library -> properties -> betas -> pick a game version (not every version is available there but 1.5.1 should be there).

The only way to stop steam from updating, is to move the game out of your steam folder, so steam cannot access it anymore. Many people (me included) keep multiple copies of different game versions somewhere else on the hard drive, that's totally fine.
You can even add a shortcut to the copy in your steam library by clicking on the 'game' menu -> add non-steam game to my library -> browse to the .exe of the KSP copy.

omg thank you, i was pannicking, thought i had lost all of my progress.

going to make a backup of my game outside of steam now, then update the steam version.

how will i know when all of my mods are updated? constantly checking their individual threads?

If you didn't use CKAN to install your mods, that's the only way. But if you use CKAN, you can set 1.6 as 'compatible version', so CKAN can inform you about updates.
I haven't took a look at 1.6 yet but actually, I don't expect much issues with mods. Like most mods from 1.4 run in 1.5, I assume this will also be possible for 1.6 since it doesn't look like there are any big changes to the API (no warranty though) ;)
