All Airstream Protective Shell 'Unstage Fairing' not in the RMB (Right Mouse Button) menu.

I have watched other people's tutorials and they have the option, although some of them are using older versions.

Here is what I see:

Maybe you need to activate "advanced tweakables" in the settings.

And finding the 'Advanced Tweakables' setting has to be done outside the VAB.   From the short menu you get with the 'Esc' key, then choosing 'Settings', it is about halfway down the long list.
