Make a pressure door

Make a pressure opening door, you may use DLC but not mods, Make it so that when Jeb steps on a panel, then a lever system will use Jebs weight to work, then use hinges to make a rotating or sliding door open. All batteries should be drained and power generation is not allowed, all energy is from the weight of Jeb or a part that fell because Jeb triggered it. It does not have to reset because that will be really hard, but extra credits if anyone can do that

This is an interesting challenge, but removing the ability to use electricity undoubtedly and exponentially ramps up the difficulty level...

Here's my entry.  I am playing 100% stock, with the MH and BG expansion packs.  I used two hinges, which are unpowered, and set to be 'free' while unpowered.  I used a command capsule to load a Kerbal into the scene, but set the electricity to 0, and did not put any electric generation on the vessel.

The door is very simple, but works.  It does reset itself to close after the Kerbal goes through.

Kerbal steps on a pressure plate, which causes an arm to move the door to open position.

After Kerbal is through door, the arm pivots back, positively closing the door.

After the Kerbal exits the apparatus, the door remains closed due to the balance of the system.  The door will positively close unless a Kerbal is on the correct side of the apparatus.

Changes some colors to make it more apparent what is happening.  The gold triangles are attached to the vertical arm.  The dark gray panel is attached to the door.  The gold and dark gray panels are set to interact with each other (own ship interaction ON).  There is just enough space between the gold panels to allow the dark gray panel to just move between them.

When a Kerbal is on the pressure plate, the arm moves against the dark gray panel, opening the door.

With no weight on the opening side, the arm moves back to it's original position, forcing the door closed as it returns.  In this case the weight of the Kerbal is helping the door to close.  However, the balance of the platform forces the door closed even with no weight on it.  In other words, the door will close automatically with no weight on the platform.

Hope I get the extra credit for a self-resetting door!
