I can’t build any mildly interesting rocket

Whenever I do so much as add a few stages and struts, my rocket phases into the ground, and really limits me to barely getting into orbit or intercepting Mun. Any attempt at using something like a hydrogen rocket or anything just phases my rocket into the floor, and disconnects everything. 
 

I don’t know how to attach an image, but basically the rocket just works the first time you launch it, then when you return to the rocket building menu, it phases the rocket into the floor. Removes any possibility of big rockets
