I don't understand heat at all

How hot can a part get before it breaks? decoupler seem to be made out of ice because they often melt on my way to space. parts once hot don't cool down etc.

is there a temp reading I can observe? the temp gauge is useless -it appears when it at this stage hot and even though im in space, it often doesn't cool down but raises.
