What would be the best way to get a large carrier ship into orbit?

Just launch it whole, or deal with the docking shenanigans by assembling it in orbit?

If your PC can handle it and the launcher, launch it in one piece.

If your PC can't, break it into the largest chunks possible and launch/ assemble it that way.

My guess anything the size of a capital ship would have to be launched in bits. These things can measure upwards of 10km in length... so even if you made a smallish one it would be hundreds, if not thousands, of parts. And you will still need Quntum Struts to keep it rigid.
