Easiest way for a polar orbit around kerbin

If you find yourself already in an equatorial orbit but would like to change from that into a polar orbit (for example you launch a bunch of satellites on the same rocket but only one needs to go to polar Kerbin orbit), then the best way is to actually transfer out to the Mun, but with a slight inclination so you come around under or above the Mun, using a gravity assist to change your inclination as you come back to Kerbin orbit.

If you aren't in orbit yet and are going from the launchpad straight into polar orbit, then as others have said, go north (by a little northwest) or south (by a little southwest). It can help to click on your velocity readout to switch from surface to orbit speed immediately, then you want to put your orbital prograde on the 0 or the 180.

From KSC, it's easy to go direct into any inclination. Want North? Heading 355 or 185 will put you in a mostly polar orbit that you'll only need to adjust slightly. Either 1 minute with a calculator, or 30 seconds with a maneuvering board, pencil, ruler and triangle, and you can find the launch heading from any planet.

one trick: at launch pad, click on your speed meter and switch to "orbit". So it will show your speed respect to an inertial reference frame, not to kerbin's surface. You'll see that you're headed east (see the yellow circle), so correct by launching northwest until the circle heads north. or south.

Yep, head full North or South, and remember that you will need a little more power than for a "classical" Eastward launch (because you don't take any advantage of the planet rotation speed). If you want to pass right over the poles, wait to be over the equator and make an inclination correction manoeuver (the purple triangles in the manoeuver tool).
