If you take samples from the pad, do an eva report, do a crew report, then recover the vessel (Either in the Tracking Station or by mousing above the altitude indicator) you will get enough science to unlock the first couple of tiers. After that just build bigger and better rockets. After you recover your vessel go to the Research center and unlock the next node.

In the same vein as with the above replies, it might be better to work on your "can't get science" problem a bit more before resorting to cheating.

Make a ship with ONLY a command module. Do an EVA on the launchpad, take a sample of the launchpad, do an EVA report, get back in the capsule and do a crew report, recover the mission. That right there is worth 12 science - enough to unlock the next tier including the Goo capsule - and you've done basically nothing.

Now go back to the VAB, stick a goo capsule on your bare command pod, and do it all again. This time, though, walk off of the launchpad onto the grass nearby and take a sample. That's another 13 science (20 total now) and enough to unlock one of three tier-3 tech. I'd go for "Survivability" because after that you can unlock "Science Tech" to get the materials bay component.

Now build a small, simple rocket and do some science while in the air. Don't even worry about getting into orbit or anything yet!

Keep doing stupid stuff like this until you get enough science to unlock "Science Tech", now you can build a proper rocket, stick some batteries and an antenna on it, and collect huge amounts of data in orbits around Kerbin, Mun and Minmus. You'll be well on your way to unlocking the whole tree.

There is a line in the persistence file... but it really does spoil the fun. I tried it and was able to just unlock everything.... then it's like, "What's the point?"

Build your way up, way more fun. If you have to cheat, do it just the once so you know how the tree is mapped, so you can 'aim' for the parts you really like/feel you need.

Half the fun is not knowing what comes next until you unlock the next tier. I had to come up with some inventive designs because I didn't have the Mainsail unlocked.

Meh, you don't need the mainsail.

That's the biggest thing career taught me. Mainsail and atomic engine are extremely overrated. Second is it taught me to keep my designs small, cause I didn't have mainsail for atmosphere, or atomic for vaccum. But turns out that makes for better rockets anyway
