Save the Cockpit !

Translation (if I may...): "Have the crew state saved along with the rest of the ship, so if I have an empty capsule/cockpit it will remain empty when I load the rocket again."

On the one hand, I have to agree that it's annoying when the capsules are re-crewed automatically... it's easy to forget to remove them and a supposedly crewless rescue mission ends up with a stow-away. On the other, saving the crew with the ship (if not empty) can easily lead to duplicate Kerbals, so I understand why THAT isn't done.

Instead, maybe just save the fact that the capsule is empty or not, and if (and only if) it's not saved empty, re-crew from the roster?

Or don't automatically crew it at all, and force a detour through the crew roster to assign Kerbals.

Try launching through the launchpad and not the VAB. I believe crew assignment shows right up.

It does, but then you have to save the ship, exit to the main KSC overview, enter the launchpad, select the ship and assign crew, then go to the launch pad proper. All this as opposed to simply clicking the "Launch" button from the VAB.

It'd be nice to make it LESS effort, not more!

I think it would be much easier to just show the boarding window every time you go to launch a rocket. It already happens when you're launching from Space Center so it could just happen when going from VAB/SPH, too. In normal cases you'd just need to click on the Launch icon again to confirm the preset crew.

Crew slot fill status could be saved with the craft including generic slots such as "auto fill" "prompt" or "empty."

So your four slot craft might have Jebidiah in slot1, Anyone in slot2, AskMe in slot3, and Empty in slot4.
