Because that's how gravitationally bound systems work. For motion of the Earth-Moon system around the Sun, for example, it's the total mass and total momentum of Earth-Moon system that's relevant. So as Earth and Moon interact, and Moon goes to a higher orbit, Earth's motion around the Sun is practically unaffected.

I'll let someone much more savvy at maths attempt to calculate how many saturn 5's on mountain tops (or more likely xx km high towers) we would need to fire to catastrophically change the orbit of the earth. :)

I think that it will take more saturns than there is room for, or even mass enough in the earth to build.

IIRC, someone, or some agency, calculated how many czar bomba- like explosions would be needed to alter the Earth's orbit. I forget the number, but the number was so large that there wouldn't be enough room on the side of the planet.
