It's not possible on the engine itself. in my understand they would have to rewrite the whole engine or modify lots of it just to fix this simple problem, which is: you can only connect one node at a time, and it's not a big of a problem after all

use struts. they work just like nodes

KSP does not support cycles in rocket construction, but you can always use struts to make additional connections.

Also note that couplers don't transfer fuel from the multiside to the single-point side. So engine below the single point will not draw fuel from tanks above the adapter unless you install fuel pipes from these tanks to the coupler. There's a good reason why it does not do that by default.
